Creamy Chicken Alfredo Lasagna Rolls

9 lasagna noodles

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup ricotta cheese

2 cups mozzarella cheese, shredded

½ cup Parmesan cheese, grated

2 cups Alfredo sauce (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: Start by boiling a large pot of salted water. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a baking sheet to prevent sticking.

    Prepare Filling: In a mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

      Assemble the Rolls: Preheat your oven to 375°F (190°C). Spread a thin layer of Alfredo sauce on the bottom of a 9x13-inch baking dish. Take one lasagna noodle, spread a generous scoop of the chicken filling across it, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat this process for all noodles.

        Top with Sauce and Cheese: Once all the rolls are in the baking dish, pour the remaining Alfredo sauce over the top, making sure to cover the rolls evenly. Sprinkle the remaining mozzarella and Parmesan cheese over the sauce.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

            Garnish and Serve: Once out of the oven, let the lasagna rolls sit for about 5 minutes. Garnish with fresh parsley before serving warm.
