1 tablespoon olive oil

1 medium onion, diced

2 carrots, sliced

2 celery stalks, chopped

3 garlic cloves, minced

1 pound boneless, skinless chicken breasts

4 cups chicken broth

1 cup heavy cream

1 cup potato gnocchi (store-bought or homemade)

2 cups fresh spinach

1 teaspoon dried thyme

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and chopped celery. Sauté for about 5-7 minutes until the vegetables are tender and the onion is translucent.

    Add Garlic and Chicken: Stir in the minced garlic and cook for another minute until fragrant. Then, add the chicken breasts to the pot, cooking for about 2-3 minutes on each side until lightly browned.

      Pour in Broth: Carefully add the chicken broth to the pot, scraping the bottom to deglaze and incorporate any browned bits. Bring it to a gentle simmer.

        Season the Soup: Add in the heavy cream, dried thyme, Italian seasoning, salt, and pepper, and stir to combine.

          Cook Chicken: Cover the pot and allow it to simmer for around 20 minutes or until the chicken is cooked through (internal temperature should reach 165°F). Remove the chicken and let it cool slightly before shredding it into bite-sized pieces.

            Add Gnocchi: Return the shredded chicken back to the pot along with the gnocchi. Cook uncovered for an additional 3-5 minutes, or until the gnocchi float to the top and are cooked through.

              Finish with Spinach: Stir in the fresh spinach and cook for an additional minute until it wilts. Taste and adjust seasoning if necessary.

                Serve: Ladle the soup into bowls, garnish with chopped fresh parsley, and sprinkle with grated Parmesan cheese if desired.
