Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

4 cups chicken broth

1 cup heavy cream

1 (16 oz) package gnocchi

2 cups fresh spinach leaves

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and Italian seasoning; cook for another minute until fragrant.

      Add in the chicken pieces, season with salt and pepper, and cook until the chicken is no longer pink, about 5-7 minutes.

        Pour the chicken broth into the pot and bring the mixture to a boil. Reduce heat and let simmer for 10 minutes.

          Stir in the heavy cream and gnocchi, and let it cook for an additional 3-5 minutes, or until the gnocchi are tender.

            Add in the fresh spinach and Parmesan cheese, stirring until the spinach has wilted and the cheese has melted into the soup, about 2-3 minutes.

              Taste and adjust seasoning with salt and pepper.

                Serve hot, garnished with fresh parsley.
