8 oz (225g) fettuccine or pasta of choice

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 cups (150g) mushrooms, sliced (cremini or button varieties)

3 cloves garlic, minced

1 medium onion, diced

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

1 tbsp olive oil

1 tbsp butter

Salt and pepper, to taste

1 tsp dried thyme

1 tsp Italian seasoning

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil and butter over medium-high heat. Add the sliced chicken and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add diced onions and sauté for 2-3 minutes until softened. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and browned, about 5-6 minutes.

        Make the Cream Sauce: Reduce the heat to medium. Pour in the heavy cream and stir to combine. Let it simmer for 3-4 minutes until slightly thickened. Stir in the grated Parmesan cheese and dried thyme, mixing well until the cheese is melted and the sauce is creamy.

          Combine: Return the cooked chicken to the skillet, along with the drained pasta. Toss everything together to coat the pasta and chicken in the creamy mushroom sauce. Adjust seasoning with salt and pepper to taste.

            Serve: Garnish with freshly chopped parsley and additional Parmesan cheese if desired. Serve hot and enjoy!
