2 lbs Yukon Gold potatoes, peeled and cut into chunks

4 cloves garlic, minced

1 cup heavy cream

½ cup unsalted butter, cut into pieces

½ tsp salt (adjust to taste)

½ tsp black pepper (adjust to taste)

¼ cup fresh chives, chopped

¼ cup grated Parmesan cheese (optional)

Fresh herbs for garnish (like parsley or thyme)

Boil the Potatoes: Place the peeled and chopped Yukon Gold potatoes in a large pot and add enough water to cover them by about an inch. Add a pinch of salt. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.
