8 oz (225g) fettuccine or spaghetti

2 salmon fillets (about 6 oz each)

3 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken or vegetable broth

1 cup freshly grated Parmesan cheese

1 teaspoon lemon juice

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sear the Salmon: While the pasta is cooking, season both sides of the salmon fillets with salt and pepper. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the salmon fillets and cook for about 4-5 minutes on each side, or until cooked through and golden brown. Remove from the skillet and let them cool before flaking into bite-sized pieces.

      Make the Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for 1-2 minutes, until fragrant but not browned.

        Combine Ingredients: Pour in the chicken or vegetable broth and bring to a simmer. Allow it to reduce for about 2-3 minutes, then reduce the heat to low and stir in the heavy cream.

          Add Cheese and Seasoning: Gradually whisk in the Parmesan cheese until melted and creamy. Stir in the lemon juice and Italian seasoning. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency. Season with additional salt and pepper to taste.

            Combine Pasta and Salmon: Add the cooked pasta to the skillet and gently toss to coat in the creamy sauce. Finally, fold in the flaked salmon until everything is combined.
