Creamy Garlic Herb Chicken Thighs

4 bone-in, skin-on chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon onion powder

2 cups fresh spinach

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs generously with salt and pepper on both sides.

    Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Add the seasoned chicken thighs, skin-side down, and sear until the skin is golden and crispy, about 5-6 minutes. Flip and sear the other side for an additional 4-5 minutes. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn the garlic.

        Create the Sauce: Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Next, stir in the heavy cream, dried thyme, dried rosemary, and onion powder. Let the mixture simmer gently for about 2-3 minutes.

          Add Spinach and Cheese: Stir in the fresh spinach and grated Parmesan cheese. Let the spinach wilt down, stirring to combine, for another 2-3 minutes.

            Finish Cooking Chicken: Return the seared chicken thighs back to the skillet, skin-side up. Spoon some of the creamy sauce over the chicken. Reduce the heat to low, cover, and let it cook for an additional 15-20 minutes, or until the chicken is cooked through and registers an internal temperature of 165°F (75°C).
