2 pounds russet potatoes, peeled and quartered

4 cloves of garlic, minced

1 cup heavy cream

1/2 cup unsalted butter, cubed

1/2 cup sour cream

Salt and freshly ground black pepper, to taste

2 tablespoons chives, finely chopped (for garnish)

1 teaspoon garlic powder (optional for extra flavor)

Prepare the Potatoes: Place the peeled and quartered potatoes in a large pot and fill it with cold water, making sure the potatoes are fully submerged. Add a generous pinch of salt to the water.

    Boil the Potatoes: Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and let the potatoes simmer until they're tender (about 15-20 minutes). You can check if they are done by piercing them with a fork; they should fall apart easily.

      Cook the Garlic: While the potatoes are cooking, in a small saucepan, melt 1 tablespoon of the butter over medium heat. Add the minced garlic and sauté it gently until fragrant and golden, about 2-3 minutes. Be careful not to burn the garlic.

        Drain and Steam the Potatoes: Once the potatoes are tender, drain them well and return them to the pot. Allow them to steam for about 1-2 minutes to remove excess moisture.

          Mash the Potatoes: Use a potato masher or a ricer to mash the potatoes until they are smooth and creamy.

            Combine Ingredients: Add the melted garlic, remaining butter, heavy cream, and sour cream to the mashed potatoes. If you choose to use garlic powder, add it here too. Stir until well combined and creamy. Season with salt and pepper to taste.
