Creamy Garlic Parmesan Chicken Pasta

8 oz fettuccine pasta

2 boneless, skinless chicken breasts (about 1 lb)

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup spinach (fresh or thawed if frozen)

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Prepare the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt and pepper. In a large skillet over medium-high heat, heat the olive oil. Add the chicken breasts and cook for about 6-7 minutes on each side or until cooked through and golden brown. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

      Make the Sauce: In the same skillet, add the minced garlic and cook for about 1 minute, until fragrant but not burned. Pour in the chicken broth and scrape any browned bits off the bottom of the skillet. Let it simmer for 2-3 minutes.

        Cream It Up: Reduce the heat to low and stir in the heavy cream. Whisk in the grated Parmesan cheese and Italian seasoning until the cheese melts and the sauce becomes creamy. If the sauce is too thick, add a little reserved pasta water until reaching desired consistency.

          Add Greens & Chicken: Stir in the spinach and cooked chicken strips. Finally, add the lemon juice and mix everything until well combined. Let it cook for an additional 2-3 minutes to heat through and wilt the spinach.

            Combine Pasta and Sauce: Add the cooked fettuccine into the skillet and toss until the pasta is well coated in the creamy sauce. If needed, adjust seasoning with salt and pepper to taste.
