12 oz penne pasta

1 cup sun-dried tomatoes, chopped (packed in oil)

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil (from the sun-dried tomato jar)

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups fresh spinach, roughly chopped

Fresh basil leaves for garnish

Extra Parmesan for serving

Cook the Penne: In a large pot of boiling salted water, cook the penne according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Garlic: In the same pot (or a large skillet), heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to let it brown.

      Prepare the Sauce: Add the chopped sun-dried tomatoes to the skillet and cook for about 2 minutes until they soften. Pour in the heavy cream and stir to combine. Bring the mixture to a simmer.
