Creamy Jalapeño Mac & Cheese – Spicy & Cheesy Perfection!

8 oz elbow macaroni

2 tbsp unsalted butter

2 tbsp all-purpose flour

2 cups whole milk

1 cup sharp cheddar cheese, shredded

1 cup pepper jack cheese, shredded

1 cup cream cheese, softened

2-3 fresh jalapeños, seeded and minced (adjust based on heat preference)

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and black pepper to taste

1/2 cup breadcrumbs (optional for topping)

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux, cooking for about 1-2 minutes until bubbly and golden.

      Add the Milk: Gradually whisk in the whole milk, continuing to stir until the mixture is smooth and begins to thicken, about 3-5 minutes.

        Incorporate the Cheeses: Lower the heat and add the sharp cheddar, pepper jack, and cream cheese. Stir continuously until all the cheese has melted and the mixture is creamy.

          Spice it Up: Mix in the minced jalapeños, garlic powder, onion powder, smoked paprika, salt, and black pepper. Taste and adjust seasoning as necessary.

            Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring to ensure that all the pasta is well coated in the creamy mixture.
