Creamy Jalapeño Mac & Cheese – Spicy & Cheesy Perfection!

8 oz elbow macaroni

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup sharp cheddar cheese, shredded

1 cup Pepper Jack cheese, shredded

1/2 cup cream cheese, softened

1-2 fresh jalapeños, finely chopped (seeds removed for less heat)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup Panko breadcrumbs (optional for topping)

Fresh cilantro or parsley, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, add the flour and whisk continuously for about 1-2 minutes to create a roux. Gradually pour in the whole milk while whisking to prevent lumps. Continue cooking until the mixture thickens, about 3-5 minutes.

      Add the Cheeses: Reduce heat to low and mix in the sharp cheddar cheese, Pepper Jack cheese, and cream cheese. Stir until melted and smooth. If the sauce is too thick, feel free to add a splash of milk until you reach your desired consistency.

        Season the Sauce: Stir in the finely chopped jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper. Taste and adjust seasonings as needed.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring well to ensure all the pasta is coated in the creamy goodness.

            Prepare for Baking (Optional): If you prefer a baked version, preheat your oven to 350°F (175°C). Transfer the creamy macaroni and cheese to a greased baking dish. Sprinkle Panko breadcrumbs on top for added crunch.

              Bake (Optional): Bake in the preheated oven for 20-25 minutes, until the top is golden and bubbly. If you're not baking, simply serve immediately.
