Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

1 tsp red pepper flakes (adjust to taste)

1 tsp Italian seasoning

Salt and pepper, to taste

2 cups fresh spinach

1 tbsp lemon juice

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Sauté the Shrimp: In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp. Season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove shrimp from the skillet and set aside.

Make the Cream Sauce: In the same skillet, reduce heat to low and add the minced garlic. Sauté for about 30 seconds, until fragrant. Pour in the chicken broth and heavy cream, stirring to combine.

Add Cheese and Seasoning: Stir in the grated Parmesan cheese, Italian seasoning, and lemon juice. Allow the sauce to simmer gently for about 5 minutes until it reduces slightly. Stir frequently to prevent burning.

Combine Shrimp and Spinach: Once the sauce is creamy, add the cooked shrimp and fresh spinach to the skillet. Stir until the spinach wilts and the shrimp is heated through, about 2 minutes.

Mix with Pasta: Add the drained fettuccine to the skillet, tossing everything together until well coated in the creamy sauce. Adjust seasoning with more salt, pepper, or red pepper flakes as needed.

Serve: Place the creamy shrimp pasta onto plates and garnish with chopped parsley. Serve immediately while warm.
