Instructions

Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

Make the Cake Batter: In a large bowl, whisk together the all-purpose flour, baking powder, cocoa powder, and salt. In another bowl, combine the eggs, sugar, milk, vegetable oil, and vanilla extract. Mix until smooth. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Pour in the boiling water and mix until the batter is smooth and glossy.

Divide and Bake: Split the batter evenly into three bowls. Leave one bowl as is for the vanilla layer. Add cocoa powder to the second bowl for the chocolate layer, and add pureed strawberries to the third bowl for the strawberry layer. Mix each bowl until well combined.

Bake the Cakes: Pour each batter into the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Prepare the Strawberry Cream Layer: In a medium bowl, whip the heavy cream until soft peaks form. Gradually add 2 tbsp powdered sugar and vanilla, then fold in the strawberry puree gently until combined. Set aside.

Prepare the Chocolate Cream Layer: In another bowl, whip the heavy cream with cocoa powder and powdered sugar until soft peaks form. Add the vanilla extract and mix gently. Set aside.

Prepare the Vanilla Cream Layer: In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Set aside.

Assembly: Once the cakes have completely cooled, place the vanilla layer on a serving plate. Spread a generous layer of strawberry cream on top. Next, place the chocolate layer and spread the chocolate cream evenly on top of that. Finally, place the last vanilla layer on top and spread the vanilla cream over the entire cake, smoothing the sides and top.

Chill and Serve: Chill the cake in the refrigerator for at least 2 hours to set the layers. Once chilled, garnish with chocolate shavings, fresh strawberries, and whipped cream as desired. Slice and serve!
