1 lb Italian sausage (mild or spicy, casings removed)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, peeled and diced

2 stalks celery, diced

4 cups chicken broth

1 can (14.5 oz) diced tomatoes (with juice)

1 cup heavy cream

1 cup grated Parmesan cheese (plus extra for serving)

2 cups fresh spinach (roughly chopped)

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

Optional: Crusty bread or croutons for serving

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage and set it aside, leaving any drippings in the pot.

    Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-6 minutes. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

      Combine Ingredients: Return the cooked sausage to the pot. Add the chicken broth, diced tomatoes (with their juice), and Italian seasoning. Stir to combine, then bring to a gentle boil. Reduce the heat and let it simmer for about 10-15 minutes.

        Add Cream and Cheese: Stir in the heavy cream and grated Parmesan cheese, allowing the soup to thicken slightly. Continue cooking on low heat, stirring frequently, until the cheese is melted and the soup is creamy, about 5 minutes.

          Incorporate Spinach: Add the chopped spinach and cook until just wilted, about 2-3 minutes. Season with salt and pepper to taste.
