1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

1 teaspoon dried thyme

1 teaspoon dried oregano

4 cups vegetable broth (or chicken broth)

1 can (15 oz) diced tomatoes, undrained

1 package (9 oz) fresh cheese tortellini

2 cups fresh spinach, roughly chopped

2 cups heavy cream

1/2 cup grated Parmesan cheese (plus extra for serving)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Cook Mushrooms: Add the sliced mushrooms to the pot, cooking until they release their moisture and begin to brown, about 5-7 minutes. Stir in the dried thyme and oregano.
