Ingredients

1 pound ground beef

1 medium onion, diced

4 cloves garlic, minced

2 cans (10 oz each) diced tomatoes with green chilies (like Rotel)

8 ounces cream cheese, softened

3 cups uncooked penne pasta

3 cups beef broth (or water)

1 cup shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Meat: In a large skillet or pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

Add Vegetables: Stir in the diced onions and minced garlic. Sauté for about 3-4 minutes until the onions are soft and translucent.

Combine Ingredients: Add the diced tomatoes with green chilies (with juice), cream cheese, chili powder, paprika, salt, and pepper. Stir until the cream cheese is melted and everything is well combined.

Cook Pasta: Once the mixture is creamy, add the uncooked penne pasta and beef broth to the skillet. Stir to combine, ensuring the pasta is submerged in the liquid.

Simmer: Bring the mixture to a gentle boil, then reduce heat to low. Cover and let it simmer for about 15-20 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.

Add Cheese: Once the pasta is cooked, remove from heat and stir in the shredded cheddar cheese until melted and creamy. Adjust seasoning if needed.

Serve: Garnish with fresh chopped parsley before serving. Enjoy this creamy, zesty pasta dish with a side of garlic bread or a fresh salad!
