Creamy Summer Corn Gnocchi

1 lb fresh or frozen gnocchi

2 cups fresh corn kernels (about 4 ears of corn)

1 cup heavy cream

1 tablespoon olive oil

2 tablespoons unsalted butter

2 cloves garlic, minced

1/2 medium onion, finely chopped

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup grated Parmesan cheese, plus more for serving

1/4 cup fresh basil, chopped

Zest of 1 lemon

Juice of 1/2 lemon

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.

    Prepare the Corn: If using fresh corn, cut the kernels off the cob. Heat a large skillet over medium heat and add the olive oil. Once hot, add the corn and cook for about 5 minutes until slightly caramelized and tender. Remove the corn from the skillet and set aside.

      Build the Sauce: In the same skillet, add the butter and lower the heat to medium-low. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        Combine the Ingredients: Pour the heavy cream into the skillet, stirring well. Season with smoked paprika, salt, and pepper. Bring the mixture to a gentle simmer and let it thicken slightly for about 4-5 minutes.

          Mix in the Gnocchi: Add the cooked gnocchi and the caramelized corn to the skillet. Toss everything together gently to coat the gnocchi in the sauce. Stir in the grated Parmesan cheese, fresh basil, lemon zest, and lemon juice. Adjust seasoning to taste.

            Serve: Plate the gnocchi and finish with extra grated Parmesan and a sprinkle of fresh basil on top. Enjoy your creamy summer delight!
