Creamy Sun Dried Tomato Chicken Pasta

Ingredients
  

8 oz. fettuccine or pasta of choice

1 lb. chicken breast, diced

1 cup sun dried tomatoes in oil, drained and roughly chopped

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 small onion, diced

2 tbsp olive oil

1 tsp dried basil

1 tsp dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: Red pepper flakes for heat

Cook the Pasta: In a large pot, bring salted water to a boil and add the pasta. Cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Sauté Chicken: In a large skillet over medium heat, heat olive oil. Add the diced chicken, season with salt, pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

        Add Sun Dried Tomatoes: Stir in the chopped sun dried tomatoes, dried basil, and dried oregano, cooking for 2 minutes.

          Make it Creamy: Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer. Let it simmer for about 4-5 minutes, allowing it to thicken slightly.

            Combine: Add the cooked chicken back into the skillet, followed by the grated Parmesan cheese. Stir until the cheese melts and the sauce is creamy. If the sauce is too thick, add reserved pasta water to reach desired consistency.

              Mix with Pasta: Add the cooked pasta into the skillet, tossing until it is well coated with the creamy sauce. Adjust seasoning with additional salt, pepper, and red pepper flakes if desired.
