8 oz (225g) pasta of choice (penne, fettuccine, or linguine)

1 lb (450g) boneless, skinless chicken breast, diced

1 cup sun-dried tomatoes (jarred in olive oil, drained and chopped)

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then, stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes.

        Make the Cream Sauce: Pour in the chicken broth and bring to a simmer. Add the heavy cream and Italian seasoning, stirring well to combine. Let the sauce simmer for 3-5 minutes, allowing it to thicken slightly.

          Combine Everything: Return the sautéed chicken to the skillet with the cream sauce. Add the cooked pasta and half of the Parmesan cheese. Toss everything together, adding reserved pasta water a little at a time until you reach desired creaminess.

            Serve: Taste and adjust seasoning with more salt, pepper, or Parmesan if needed. Garnish with fresh basil and extra Parmesan cheese. Serve immediately and enjoy!
