Ingredients

1 pound store-bought gnocchi

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional for a kick)

Salt and pepper to taste

1 cup fresh basil leaves, chopped (plus extra for garnish)

½ cup grated Parmesan cheese (plus extra for serving)

Instructions

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions, usually until they float to the surface (about 2-4 minutes). Drain and set aside.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.

Add Tomatoes and Spices: Pour in the crushed tomatoes, and stir in the dried oregano, red pepper flakes (if using), salt, and pepper. Allow this mixture to simmer for about 5-7 minutes to let the flavors meld.

Incorporate Cream: Lower the heat and slowly stir in the heavy cream. Mix well and cook for another 2-3 minutes until the sauce is creamy and well combined.

Combine Gnocchi and Sauce: Gently fold in the cooked gnocchi and chopped basil until they are fully coated with the sauce. Allow everything to cook together for an additional 2 minutes.

Add Cheese: Stir in the grated Parmesan cheese until it’s melted and incorporated into the sauce. Taste and adjust seasoning with more salt and pepper if necessary.

Serve: Serve the creamy tomato basil gnocchi warm, garnished with extra basil and Parmesan on top. Enjoy!
