Creamy Tomato Basil Pasta

12 oz (340g) fettuccine or your choice of pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon sugar (to balance acidity)

Salt and pepper, to taste

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

1 cup fresh basil leaves, chopped (plus more for garnish)

1/2 cup grated Parmesan cheese (plus more for serving)

Zest of 1 lemon

Freshly cracked black pepper, for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic: In a large skillet over medium heat, heat the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, until fragrant.

      Prepare the Sauce: Stir in the crushed tomatoes, and let this simmer for about 5 minutes. Then, pour in the heavy cream and add the sugar, salt, pepper, and red pepper flakes (if using). Stir to combine and allow it to simmer for an additional 5-7 minutes, until the sauce thickens slightly.

        Incorporate Basil & Cheese: Reduce the heat to low. Add the chopped basil, Parmesan cheese, and lemon zest to the tomato cream sauce, stirring until everything is well combined. Taste and adjust the seasoning as necessary.

          Combine Pasta and Sauce: Add the cooked fettuccine to the skillet with the sauce. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

            Serve: Divide the pasta among serving plates. Garnish with additional fresh basil, a sprinkle of Parmesan cheese, and cracked black pepper. Enjoy immediately!
