1 cup orzo pasta

2 cups vegetable broth (or chicken broth)

1 can (14 oz) diced tomatoes, with juices

1/2 cup heavy cream (or coconut milk for a dairy-free option)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish

Sauté Onions and Garlic: In a large saucepan or skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Orzo: Pour in the vegetable broth and bring to a gentle boil. Add the orzo pasta, diced tomatoes (with juices), dried basil, and oregano. Reduce the heat to low, cover, and let it simmer for about 10-12 minutes, or until the orzo is al dente and most of the liquid has been absorbed, stirring occasionally.
