Ingredients
  

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 jalapeño, finely chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 cup heavy cream

1 cup diced tomatoes (canned or fresh)

1 cup corn (fresh, frozen, or canned)

1/2 cup fresh cilantro, chopped

Salt and pepper to taste

Juice of 1 lime

Crumbled feta cheese for garnish (optional)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

    Stir in the minced garlic and jalapeño and cook for an additional 1-2 minutes until fragrant.

      Add the ground cumin and smoked paprika, cooking for another minute to toast the spices.

        Pour in the diced tomatoes and corn, and stir everything together. Let it simmer for about 5 minutes.

          Lower the heat and add the heavy cream, mixing until fully incorporated. Bring the mixture to a gentle simmer.

            Add the shrimp to the skillet, cooking for about 5-7 minutes, or until they turn pink and opaque.

              Stir in the lime juice and season with salt and pepper to taste.

                Remove from heat and fold in the chopped cilantro.

                  Serve hot, garnished with crumbled feta cheese if desired.
