Creamy Tuscan Chicken Roll-Ups

For the Chicken:

4 boneless, skinless chicken breasts

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

For the Filling:

1 cup fresh spinach, chopped

1 cup sun-dried tomatoes, finely chopped

1 cup ricotta cheese

1/2 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

Zest of 1 lemon

For the Creamy Sauce:

1 cup heavy cream

1/2 cup chicken broth

1 tablespoon flour (for thickening)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Prepare the Chicken: Preheat your oven to 375°F (190°C). Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thick. Season both sides with Italian seasoning, salt, and pepper.

    Make the Filling: In a mixing bowl, combine chopped spinach, sun-dried tomatoes, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, dried basil, dried oregano, and lemon zest. Mix well until all ingredients are combined.

      Assemble the Roll-Ups: Lay each chicken breast flat on a clean surface. Spoon a generous amount of the filling mixture onto one end of the chicken breast. Roll the chicken up tightly, starting from the filled end, and secure with toothpicks if necessary. Repeat with all chicken breasts.

        Sear the Roll-Ups: In a large skillet, heat olive oil over medium heat. Once hot, add the chicken roll-ups, seam side down. Sear for about 3-4 minutes on each side or until golden brown. Remove the chicken from the pan and set aside.

          Prepare the Creamy Sauce: In the same skillet, lower the heat and add the chicken broth. Scrape the bottom of the pan to deglaze. Stir in flour to thicken, followed by heavy cream. Whisk continuously until the sauce thickens. Season with salt and pepper to taste.

            Bake the Roll-Ups: Place the seared chicken roll-ups in a baking dish and pour the creamy sauce over the top. Cover with foil and bake for 20-25 minutes. Remove foil for the last 5 minutes of baking to allow the top to brown slightly.

              Serve: Once done, remove the roll-ups from the oven. Let them cool for a few minutes before slicing. Garnish with fresh basil leaves and serve with your favorite sides, such as garlic bread or a crisp salad.
