1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 medium carrots, diced

1 zucchini, diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn kernels, drained

1 can (14.5 oz) diced tomatoes with green chilies

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup heavy cream or coconut milk for a dairy-free option

Fresh lime juice from 1 lime

Chopped fresh cilantro for garnish

Tortilla chips for serving

1 avocado, sliced for topping

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sauté until the onion becomes translucent, about 4-5 minutes.

    Stir in the bell peppers, carrots, and zucchini. Cook for another 5-7 minutes until the vegetables are slightly softened.

      Add the black beans, corn, diced tomatoes (with their juices), vegetable broth, cumin, chili powder, and smoked paprika. Season with salt and pepper to taste.

        Bring the mixture to a boil, then reduce the heat to low and allow it to simmer for 20 minutes, stirring occasionally.

          After simmering, add the heavy cream (or coconut milk) and stir well to combine. Let it cook for an additional 5 minutes just to heat through. Adjust seasoning by adding more salt, pepper, or lime juice to taste.
