12 oz pasta (penne or rigatoni)

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1/4 teaspoon red pepper flakes (adjust to taste)

1 can (15 oz) crushed tomatoes

1/2 cup vodka

1 cup heavy cream

1/2 teaspoon dried oregano

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta cooking water.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.

      Make the Sauce: Pour in the crushed tomatoes and vodka, stirring well. Allow the mixture to simmer for about 10 minutes to let the alcohol evaporate and the flavors meld.

        Creamy Base: Reduce the heat to low and slowly stir in the heavy cream, cooking until the sauce is smooth and heated through. Add the dried oregano, salt, and pepper, adjusting to taste.

          Combine: Add the cooked pasta to the skillet, tossing to coat thoroughly. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
