Creamy Zucchini Tomato Pasta

8 oz fettuccine or spaghetti

2 medium zucchinis, spiralized or sliced thinly

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

2 tbsp olive oil

1 tsp dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Cook the Pasta: Begin by boiling a large pot of salted water over high heat. Once boiling, add the fettuccine or spaghetti and cook according to package instructions until al dente. Drain the pasta reserving about ½ cup of the pasta water.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.

      Add Zucchini and Tomatoes: Stir in the sliced zucchini and halved cherry tomatoes. Cook for about 5-7 minutes until the zucchini is tender and the tomatoes are slightly blistered.

        Create the Creamy Sauce: Lower the heat to medium-low and pour in the heavy cream. Stir in the grated Parmesan cheese and dried oregano. Mix well until the cheese is fully melted and the sauce becomes creamy.

          Combine Pasta and Sauce: Add the drained pasta into the skillet with the creamy zucchini and tomato sauce. Toss everything together, adding reserved pasta water as needed to reach your desired sauce consistency. Season with salt and pepper to taste.
