1 medium eggplant (about 1 pound), cut into fries (approximately 1/4 inch thick)

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs (use gluten-free if needed)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for spice)

Salt and black pepper, to taste

Olive oil spray or cooking spray

Prep the Eggplant: Place the cut eggplant fries in a bowl of salted water and let soak for about 30 minutes. This helps reduce bitterness and improve texture. After soaking, drain and pat them dry with paper towels.

    Set Up the Breading Station: In three separate shallow bowls, set up your breading station.

      - In the first bowl, add the flour and season with salt and pepper.

        - In the second bowl, whisk the eggs until well combined.

          - In the third bowl, combine panko breadcrumbs, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), and a pinch of salt.

            Coat the Eggplant Fries: Take each eggplant fry and dredge it in the flour, shaking off any excess. Next, dip it into the egg mixture, allowing any excess to drip off, then finally coat it with the seasoned panko breadcrumbs. Ensure each fry is well coated.

              Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes. This ensures your fries will start cooking right away, resulting in better crispiness.

                Air Fry the Eggplant Fries: Lightly spray the air fryer basket with olive oil. Place a single layer of eggplant fries in the basket, making sure they are not overcrowded. Lightly spray the tops of the fries with olive oil spray.

                  Cooking Time: Air fry the eggplant fries at 400°F (200°C) for 12-15 minutes, flipping halfway through, until they are golden brown and crispy. You may need to cook in batches depending on the size of your air fryer.
