Crispy Baked Avocado Fries

Ingredients
  

2 ripe avocados, halved and pitted

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

½ teaspoon garlic powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Optional: ¼ teaspoon cayenne pepper (for extra heat)

Olive oil spray (for cooking)

Dipping sauce of your choice (sriracha mayo or ranch work well!)

Instructions
 

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the avocados: Gently scoop the avocado halves out of their skins and cut them into wedges or fries. Set aside.

      Set up the breading station: In three separate shallow bowls, add the flour to the first one, whisk the eggs in the second, and mix the panko breadcrumbs with garlic powder, smoked paprika, salt, black pepper, and cayenne (if using) in the third.

        Bread the avocado fries: Dip each avocado wedge first into the flour, making sure to coat it evenly, then into the egg mixture, allowing any excess to drip off. Finally, coat it with the breadcrumb mixture, pressing gently to adhere.

          Arrange the fries: Place the breaded avocado fries on the prepared baking sheet in a single layer. Spray the tops lightly with olive oil spray to help with browning.

            Bake: Place in the preheated oven and bake for about 15-20 minutes, or until golden and crispy, flipping halfway through for even cooking.

              Serve: Once baked to perfection, remove from the oven and let cool for a couple of minutes. Serve warm with your favorite dipping sauce!
