1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (adjust for spice preference)

Vegetable oil (for frying)

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust for heat preference)

1 teaspoon honey

1 teaspoon lime juice

Salt to taste

Marinate Chicken: In a bowl, combine the chicken pieces with buttermilk. Cover and marinate for at least 1 hour or up to overnight in the refrigerator.

    Prepare Dry Coating: In a separate bowl, mix together flour, cornstarch, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.

      Coat the Chicken: Remove chicken from the buttermilk, allowing excess to drip off. Dredge the chicken pieces in the flour mixture, pressing lightly to ensure an even coating. Shake off any excess flour.

        Heat Oil for Frying: In a deep skillet or frying pan, heat about 2 inches of vegetable oil to 350°F (175°C).

          Fry Chicken: In batches, fry the coated chicken pieces until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels to remove any excess oil.

            Make Bang Bang Sauce: In a bowl, combine mayonnaise, sweet chili sauce, Sriracha, honey, lime juice, and salt. Mix well until smooth.

              Toss Chicken in Sauce: Once all the chicken is fried and still hot, place it in a large mixing bowl. Drizzle over the Bang Bang sauce and toss to coat evenly.

                Serve: Serve the Crispy Bang Bang Chicken immediately, garnished with sliced green onions or sesame seeds if desired.
