Crispy Buffalo Ranch Cauliflower Bites – Guilt-Free & Delicious!

1 large head of cauliflower, cut into bite-sized florets

1 cup whole wheat flour (or gluten-free flour)

1 cup unsweetened almond milk (or any plant-based milk)

2 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1 tsp salt

1/2 tsp black pepper

1 cup whole grain breadcrumbs

1/2 cup hot sauce (preferably Frank’s RedHot for authenticity)

2 tbsp olive oil

2 tbsp chopped fresh parsley (for garnish)

Ranch dressing (for dipping, optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 450°F (232°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Breading: In a mixing bowl, whisk together the whole wheat flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth. The batter should be thick but pourable.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it's fully covered, then let the excess drip off.

        Bread the Florets: Roll the coated cauliflower in the whole grain breadcrumbs. Make sure each piece is nicely coated. Place the breaded florets on the prepared baking sheet in a single layer.

          Bake the Cauliflower: Bake in the preheated oven for 20-25 minutes or until the florets are golden brown and crispy, flipping them halfway through to ensure even cooking.

            Toss with Buffalo Sauce: In a small bowl, mix the hot sauce and olive oil. Once the cauliflower bites are done, remove them from the oven and immediately toss them in the hot sauce mixture until well coated.

              Return to the Oven: Place the sauced cauliflower back on the baking sheet and bake for an additional 5-7 minutes to set the sauce and crisp them up even more.

                Serve and Enjoy: Remove from the oven and let cool slightly. Garnish with fresh parsley and serve with your favorite ranch dressing on the side for dipping.
