Ingredients

2 pounds chicken wings

1 tablespoon baking powder (aluminum-free)

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional for heat)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Celery sticks and ranch dressing (for serving)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil for easy cleanup. Place a wire rack on top of the baking sheet to allow air circulation around the wings.

Prepare the Wings: Pat the chicken wings dry with paper towels. This step is crucial for achieving maximum crispiness. Make sure they are as dry as possible.

Make the Dry Rub: In a large bowl, combine the baking powder, salt, garlic powder, onion powder, smoked paprika, dried oregano, black pepper, and cayenne pepper (if using). Mix until well combined.

Coat the Wings: Place the dry wings in the bowl with the dry rub and drizzle with olive oil. Toss the wings until they are evenly coated with the seasoning mixture.

Arrange on Rack: Lay the wings in a single layer on the wire rack, ensuring they are not touching each other. This allows the hot air to circulate and makes them crispy.

Bake: Place the baking sheet in the preheated oven and bake for 40-45 minutes, flipping the wings halfway through the baking time. They should be golden brown and crispy.

Crisp them up (Optional): If you want extra crispiness, broil the wings on high for an additional 2-3 minutes, watching closely to prevent burning.

Serve: Remove the wings from the oven and let them rest for a few minutes. Garnish with chopped parsley and serve with celery sticks and ranch dressing for dipping.
