1 cup fresh corn kernels (or canned/frozen, drained)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

1/4 cup fresh cilantro or parsley, chopped

1 small jalapeño, finely diced (optional)

1/2 cup buttermilk (or milk with 1/2 tsp lemon juice added)

1 large egg

Oil for frying (vegetable or canola)

Prepare the Batter: In a large bowl, combine the flour, cornmeal, baking powder, salt, black pepper, and paprika if using. Mix well.

    Add Ingredients: Stir in the corn kernels, chopped cilantro or parsley, and diced jalapeño if desired.

      Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk and egg until smooth.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are fine.

          Heat Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. You can test if the oil is ready by dropping a small amount of batter into the oil; it should sizzle upon contact.

            Fry Fritters: Using a spoon or small ice cream scoop, drop heaping tablespoons of batter into the hot oil. Flatten them slightly with the back of the spoon.

              Cook Until Golden: Fry for about 2-3 minutes on each side, or until golden brown and crispy. Don’t overcrowd the pan; fry in batches if necessary.

                Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
