2 large eggs, beaten

1 cup grated Parmesan cheese

1 cup marinara sauce (for dipping)

2 teaspoons Italian seasoning

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil spray or vegetable oil for frying

Prep the Eggplant: Preheat your oven to 400°F (200°C). Begin by seasoning the eggplant slices with salt. Lay the slices on a baking sheet and let them sit for about 20-30 minutes to draw out moisture (this helps reduce bitterness). After 30 minutes, pat the slices dry with a paper towel.

    Set Up Breading Station: In a shallow dish, set up your breading station. Place flour in the first dish, beaten eggs in the second dish, and mix breadcrumbs with Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper in the third dish.
