1 cup buttermilk

1 cup panko breadcrumbs

Vegetable oil (for frying)

4 crusty sandwich rolls (brioche or ciabatta preferred)

1 cup shredded lettuce

1 large tomato, sliced

1/2 red onion, thinly sliced

Tartar sauce (store-bought or homemade)

Prepare the Cod: Rinse and pat dry the cod fillets with paper towels. Cut them into sandwich-sized pieces (around 4-5 inches long if using large fillets).
