Ingredients

2 large yellow onions, sliced into 1/4-inch rings

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

1 cup buttermilk (or milk with a splash of vinegar)

1 cup breadcrumbs (Panko for extra crunch)

Oil for frying (vegetable or canola)

Optional: fresh parsley for garnish

Instructions

Prep the Onions: Peel the onions and slice them into 1/4-inch thick rings. Carefully separate the rings and set aside in a bowl.

Make the Batter: In a mixing bowl, whisk together the flour, baking powder, paprika, garlic powder, salt, and black pepper. In another bowl, whisk the egg and combine with the buttermilk. Gradually add the wet mixture to the dry ingredients, stirring until just combined.

Coat the Rings: Dip each onion ring into the batter, ensuring they are fully coated, then let any excess batter drip off. Next, roll each battered ring in the breadcrumbs, pressing lightly to adhere. Place the coated rings on a baking sheet or plate.

Heat the Oil: In a large, deep skillet, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accurate temperature.

Fry the Onion Rings: Carefully add a few onion rings to the hot oil, making sure not to overcrowd the pan. Fry for 2-3 minutes or until golden brown, flipping them halfway through for even cooking. Use a slotted spoon to transfer the fried rings to a paper towel-lined plate to drain excess oil.

Repeat: Continue frying remaining onion rings in batches until all are cooked.

Serve: Garnish with fresh parsley if desired, and serve hot with your favorite dipping sauce, such as ranch or spicy mayo.
