1/2 cup unsalted butter, melted

6 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 teaspoon fresh rosemary, minced (or 1/2 teaspoon dried)

1 teaspoon onion powder

1 teaspoon paprika (smoked or regular)

Salt and freshly ground black pepper, to taste

1/4 teaspoon red pepper flakes (optional, for heat)

    Boil the Potatoes: Wash the baby potatoes thoroughly. In a large pot, place the potatoes and cover with water. Add a generous pinch of salt and bring to a boil. Cook the potatoes until fork-tender, about 15-20 minutes. Drain and allow them to cool slightly.

      Smash the Potatoes: Once the potatoes are cool enough to handle, place them on a clean surface or a cutting board. Use the bottom of a sturdy glass or the palm of your hand to gently smash each potato until it flattens but still holds its shape.
