1 lb salmon fillet, skin removed and cut into bite-sized cubes

1/2 cup all-purpose flour

1/2 cup panko breadcrumbs

1 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

1/2 cup honey

4 cloves garlic, minced

2 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

2 green onions, thinly sliced (for garnish)

Prepare the salmon: Rinse the salmon cubes under cold water and pat them dry with paper towels. This helps in achieving a crispy crust.

    Set up the breading station: In one bowl, combine the all-purpose flour, garlic powder, salt, and pepper. In a separate bowl, place the panko breadcrumbs.

      Bread the salmon bites: Dredge each salmon cube in the flour mixture, shaking off any excess. Then, dip into the panko breadcrumbs, pressing gently to ensure they adhere well. Place the breaded salmon bites on a plate.

        Make the honey garlic sauce: In a small saucepan over medium heat, combine honey, minced garlic, soy sauce, rice vinegar, and sesame oil. Stir well and bring it to a gentle simmer. Let it cook for 3-5 minutes until slightly thickened. Remove from heat and set aside.

          Fry the salmon bites: In a large frying pan, heat enough cooking oil over medium-high heat to cover the bottom of the pan. Once the oil is hot (test by dropping in a breadcrumb—it should sizzle), add the salmon bites in a single layer, cooking in batches if necessary. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

            Toss with sauce: In a large bowl, immediately toss the crispy salmon bites with the honey garlic sauce, making sure they are well coated.
