1 lb fresh salmon fillet, skin removed and cut into bite-sized cubes

1/2 cup all-purpose flour

1/2 cup breadcrumbs (Panko for extra crispiness)

1/4 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/3 cup honey

1/4 cup soy sauce (low sodium preferred)

2 cloves garlic, minced

1 tablespoon rice vinegar (or apple cider vinegar)

1 tablespoon sesame oil

1 tablespoon green onions, chopped (for garnish)

Prepare the Breading: In a shallow dish, mix together the flour, breadcrumbs, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.

    Coat the Salmon: Dredge each salmon cube in the flour mixture, ensuring it is fully coated. Shake off any excess and set aside.

      Make the Honey Garlic Sauce: In a small saucepan over medium heat, combine honey, soy sauce, minced garlic, rice vinegar, and sesame oil. Stir until well combined and bring to a simmer. Cook for about 3-4 minutes, or until the sauce slightly thickens. Remove from heat and set aside.

        Heat the Oil: In a large skillet, pour enough cooking oil to cover the bottom and heat over medium-high heat.

          Fry the Salmon Bites: Carefully add the breaded salmon pieces to the hot oil in batches, avoiding overcrowding. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to transfer cooked salmon bites to a paper towel-lined plate to drain excess oil.

            Toss in Sauce: Once all salmon bites are cooked, return them to the skillet (remove excess oil if necessary) and pour the honey garlic sauce over them. Toss gently to coat the salmon bites evenly with the sauce.

              Serve: Transfer the crispy honey garlic salmon bites to a serving platter. Garnish with chopped green onions and serve warm.
