4 oz cream cheese, softened

1/4 cup almond flour

1/4 cup shredded mozzarella cheese

1 large egg

1/4 tsp baking powder

1/2 tsp vanilla extract

1 tsp cinnamon

1 tbsp erythritol (or your preferred keto sweetener)

A pinch of salt

Butter or coconut oil for frying

Prepare the Dough: In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for 30 seconds, stir, and microwave again for another 30 seconds until melted and well combined.

    Mix the Ingredients: Add the almond flour, baking powder, egg, vanilla extract, and a pinch of salt to the melted cheese mixture. Stir until a smooth dough forms. It may be slightly sticky; that's okay.

      Shape the Roll Ups: Place the dough between two sheets of parchment paper. Using a rolling pin, roll out the dough into a rectangle about 1/4 inch thick. Remove the top parchment paper.

        Cinnamon Mixture: In a small bowl, mix the erythritol and cinnamon together; sprinkle this mixture evenly over the dough.

          Roll the Dough: Using the bottom parchment paper to help, carefully roll up the dough tightly from one edge to the opposite edge, forming a log.

            Slice the Roll: Cut the log into 1-inch thick slices. You should get about 8 roll-ups.

              Fry the Roll Ups: In a skillet, heat some butter or coconut oil over medium heat. Add the roll ups cut side down and fry for about 3-4 minutes until golden brown, then flip and cook for an additional 3-4 minutes.

                Serve: Once they are crispy and golden, remove from the skillet and let cool slightly. Dust with extra cinnamon and erythritol if desired.
