2 pounds baby potatoes (yellow or red), halved

1/4 cup olive oil

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 tablespoon Dijon mustard

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried rosemary

1 teaspoon dried thyme

1 teaspoon sea salt (adjust to taste)

1/2 teaspoon freshly cracked black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: In a large mixing bowl, add the halved baby potatoes. Make sure they’re cut side down for a crispy finish.

      Make the Marinade: In a separate small bowl, whisk together olive oil, lemon zest, lemon juice, Dijon mustard, garlic powder, onion powder, rosemary, thyme, sea salt, and black pepper until well combined.

        Toss the Potatoes: Pour the marinade over the halved potatoes. Using your hands or a spatula, toss the potatoes until they're well-coated with the mixture.

          Arrange on Baking Sheet: Spread the coated potatoes out on the prepared baking sheet in a single layer, cut side down. This will help them get crispy on that side.

            Roast in the Oven: Roast the potatoes in the preheated oven for about 30-35 minutes, flipping them halfway through for even browning. They are done when they are golden brown and crispy.
