Ingredients

1 pound chicken breast tenders

1 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 cup seasoned bread crumbs

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

Cooking spray or olive oil for baking

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Chicken: Pat the chicken tenders dry with paper towels to remove excess moisture. This will help them get crispy when baked.

Set Up the Breading Station: In three separate shallow bowls, set up your breading station:

        - In the first bowl, place the all-purpose flour.

          - In the second bowl, whisk together the eggs and Dijon mustard until well combined.

            - In the third bowl, mix the seasoned bread crumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and salt.

Bread the Chicken Tenders: Take each chicken tender and dip it first into the flour, coating it completely and shaking off any excess. Then, dip it into the egg mixture, ensuring it's fully coated. Finally, dredge it in the bread crumb and Parmesan mixture, pressing gently to ensure it adheres well. Place the coated chicken tenders on the prepared baking sheet.

Spray for Crispiness: Once all the chicken tenders are breaded and arranged on the baking sheet, lightly spray the tops with cooking spray or drizzle with a bit of olive oil. This will help them turn golden and crispy in the oven.

Bake: Bake the chicken tenders in the preheated oven for about 15-20 minutes, or until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C). Flip them halfway through for even cooking.

Serve and Enjoy: Once done, remove the chicken tenders from the oven and let them cool for a couple of minutes. Serve them warm with your favorite dipping sauces like honey mustard, marinara, or ranch dressing. Enjoy the kid-approved crispy goodness!
