Crispy Shrimp Balls with Sweet Chili Sauce

1 lb (450g) raw shrimp, peeled and deveined

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 cup green onions, finely chopped

1 egg, beaten

1 teaspoon soy sauce

1 teaspoon sesame oil

1/4 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Vegetable oil, for frying

Optional: Fresh cilantro, for garnish

Sweet Chili Sauce:

1/2 cup sweet chili sauce

1 tablespoon lime juice

1 teaspoon fish sauce (optional)

1 teaspoon chopped cilantro (for garnish)

Instructions
 

Prep the Shrimp: Place the peeled and deveined shrimp into a food processor. Pulse until roughly chopped but not pureed, leaving some texture.

    Combine Ingredients: In a bowl, mix the chopped shrimp, breadcrumbs, grated Parmesan, minced garlic, green onions, beaten egg, soy sauce, sesame oil, red pepper flakes, salt, and pepper until well combined.

      Form the Balls: Using your hands, take portions of the mixture and roll them into small balls, about the size of a golf ball.

        Heat Oil: In a deep frying pan or pot, heat enough vegetable oil to cover the balls (about 2 inches deep) over medium heat until it reaches 350°F (175°C).

          Fry the Shrimp Balls: Carefully drop the shrimp balls into the hot oil in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Remove with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

            Prepare the Sweet Chili Sauce: In a small bowl, mix the sweet chili sauce, lime juice, and fish sauce (if using). Stir well and garnish with chopped cilantro.

              Serve: Arrange the crispy shrimp balls on a serving platter. Serve hot, drizzled with the sweet chili sauce, and garnish with fresh cilantro if desired.
