2 medium zucchinis

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko recommended for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray or olive oil (for drizzling)

Optional: fresh parsley for garnish, marinara sauce for dipping

Prep the Zucchini: Wash the zucchinis and cut off the ends. Slice them into fry-like shapes, approximately 1/4 inch thick. To remove excess moisture, sprinkle the zucchini slices with a bit of salt and let them sit for about 20 minutes. Afterward, pat them dry with paper towels.

    Set Up Breading Station: In three separate bowls, place the flour in one, whisk the eggs in the second, and combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in the third.

      Bread the Zucchini: Take a zucchini slice, coat it in the flour, shaking off excess. Then, dip it into the beaten eggs, allowing any excess to drip off. Finally, dredge it in the breadcrumb mixture, pressing lightly to ensure even coating. Repeat this process until all zucchini slices are breaded.

        Prepare for Baking: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the breaded zucchini fries in a single layer. Do not overcrowd the pan.
