2 lbs boneless, skinless chicken breasts or thighs

1 cup BBQ sauce (your favorite brand or homemade)

1/2 cup chicken broth

1 medium onion, diced

4 cloves garlic, minced

1 tablespoon brown sugar

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional for heat)

Prepare the Chicken: Place the chicken breasts or thighs at the bottom of the crock pot.

    Mix the Sauce: In a medium bowl, combine the BBQ sauce, chicken broth, diced onion, minced garlic, brown sugar, apple cider vinegar, smoked paprika, chili powder, black pepper, salt, and cayenne pepper (if using). Stir well to combine all ingredients.

      Combine in the Slow Cooker: Pour the BBQ mixture over the chicken in the crock pot, ensuring the chicken is well coated.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded with a fork.

          Shred the Chicken: Once cooked, remove the chicken from the crock pot and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces.

            Return and Mix: Return the shredded chicken to the crock pot, mixing it with the remaining BBQ sauce in the pot. Let it cook for an additional 15-30 minutes on low to ensure it's heated through.

              Serve: Toast your buns if desired, then pile the pulled BBQ chicken onto each bun. Top with coleslaw for extra crunch and flavor, if preferred.
