Crock Pot Beef Stew

Ingredients
  

2 lbs beef chuck roast, cut into 1-inch cubes

4 large carrots, sliced

3 medium potatoes, diced

1 large onion, chopped

3 cloves garlic, minced

1 cup beef broth

1 cup red wine (optional, can replace with additional broth)

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried rosemary

2 bay leaves

Salt and pepper, to taste

2 tbsp olive oil

1 cup peas (fresh or frozen, added near the end of cooking)

Instructions
 

Start by seasoning the beef cubes with salt and pepper. In a skillet, heat olive oil over medium-high heat. Brown the beef cubes on all sides in batches (about 5-7 minutes), and then transfer them to the Crock Pot.

    In the same skillet, add the chopped onions and minced garlic. Sauté until the onions are translucent, about 3-4 minutes. This will help build flavor. Once done, transfer the onion and garlic mixture to the Crock Pot.

      Add the carrots, potatoes, beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves to the Crock Pot. Stir to combine all ingredients evenly.

        Cover the Crock Pot and set it to low heat. Cook for 7-8 hours or until the beef is tender and the vegetables are cooked through. If you're short on time, you can cook on high for 4-5 hours instead.

          About 30 minutes before serving, stir in the peas. Allow them to heat through and become tender.

            Before serving, taste and adjust the seasoning with salt and pepper, and remove the bay leaves.

              Serve the beef stew hot, garnished with fresh herbs if desired. Enjoy with crusty bread for a complete meal!
