2 pounds beef chuck, cut into 1-inch cubes

3 cups beef broth

4 medium potatoes, peeled and diced

3 carrots, sliced

2 celery stalks, chopped

1 onion, diced

3 cloves garlic, minced

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons cornstarch (optional for thickening)

Fresh parsley for garnish

Instructions
 

In a large skillet, heat olive oil over medium-high heat. Brown the beef cubes on all sides, about 4-5 minutes. This step adds depth of flavor to the stew.

    Transfer the browned beef to the crock pot. Add the diced potatoes, sliced carrots, chopped celery, diced onion, and minced garlic on top of the beef.

      In a separate bowl, mix the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour this mixture over the ingredients in the crock pot.

        Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and the vegetables are cooked through.

          If you prefer a thicker stew, mix the cornstarch with a little water to create a slurry, and stir it into the stew about 30 minutes before serving. Allow the stew to thicken.

            Once cooked, taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
