Ingredients

4 boneless, skinless chicken breasts

1 box (6 oz) stuffing mix (your choice, e.g., savory herbs or cornbread)

1 can (10.5 oz) cream of chicken soup

1 cup low-sodium chicken broth

1 medium onion, diced

2 stalks celery, diced

1 tsp garlic powder

1 tsp dried thyme

1 tsp dried rosemary

½ tsp black pepper

2 cups fresh green beans (optional, for added veggie goodness)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: Season the chicken breasts with garlic powder, thyme, rosemary, and black pepper. Place them in the bottom of the slow cooker.

Veggie Layer: Scatter the diced onion and celery evenly over the chicken.

Prepare the Stuffing: In a medium bowl, combine the stuffing mix with the cream of chicken soup and chicken broth. Stir until well mixed. Spoon the stuffing mixture evenly over the chicken and vegetables in the slow cooker.

Add Green Beans: If using, layer the fresh green beans on top of the stuffing for a pop of color and nutrition.

Cook: Cover the slow cooker with the lid and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours. The chicken should be fully cooked and tender, and the stuffing should be heated through.

Serve: Once done, carefully remove the chicken and stuffing from the slow cooker. Garnish with fresh parsley before serving.

Enjoy: Serve hot, perhaps with a side of mashed potatoes or a crisp salad for a complete meal.
