Crockpot Chicken and Wild Rice Soup

1 pound boneless, skinless chicken breasts

1 cup wild rice, rinsed and drained

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

4 cups chicken broth (preferably low-sodium)

1 cup heavy cream (or coconut milk for dairy-free option)

1 teaspoon dried thyme

1 teaspoon dried parsley

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

1 cup fresh spinach (or kale), roughly chopped

Juice of 1 lemon

2 tablespoons olive oil or butter

Instructions
 

Prepare the Chicken: Heat olive oil or butter in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

    Layer the Ingredients in the Crockpot: Place the sautéed onion and garlic mixture at the bottom of your crockpot. Add the chicken breasts, followed by the wild rice, sliced carrots, diced celery, dried thyme, dried parsley, black pepper, and salt. Pour in the chicken broth, ensuring everything is submerged.

      Cook the Soup: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the wild rice is tender.

        Shred the Chicken: Once the cooking time is up, remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken back into the soup.

          Add Cream and Greens: Stir in the heavy cream and the chopped spinach (or kale). Allow it to cook on low for another 30 minutes until the greens are wilted and the soup is heated through.

            Finish and Serve: Just before serving, stir in the lemon juice to brighten the flavors. Adjust seasoning if necessary. Serve the soup hot, garnishing with fresh herbs if desired.
